Cider doesn’t come out of nowhere: behind every bottle and every kupela there’s a sagardogile (cider maker), a llagar or a cider mill. Some serve it to you in their own cider house; others just make it and sell it. They’re all here.

What each quality label guarantees

  • DO Euskal Sagardoa Designation of origin for natural Basque cider: only apples of local varieties grown in Álava, Bizkaia, Gipuzkoa and the French Basque Country. The seal goes on each bottle, not on the cider maker. Regulatory council website
  • PDO Sidra de Asturias Protected designation of origin for Asturian cider, made with apples of authorised varieties grown in Asturias. The same llagar can sell cider with and without the PDO. Regulatory council website
  • GI Aguardiente de sidra de Asturias Geographical indication for brandy distilled from Asturian cider.
  • Organic production Cider certified as organic by the body in its territory: Ekolurra, CPAEN, COPAE, CRAEGA or AB in the French Basque Country.
  • Artisan Food (Galicia) Label awarded by the Xunta (Galician government) to food made by artisan methods in Galicia.
  • Eusko Label Basque Government quality label for agri-food products made in the Basque Country under a monitored set of specifications. Regulatory council website
  • Gorenak Quality mark of the Provincial Council of Gipuzkoa for agri-food products from Gipuzkoa.
  • Vignobles & Découvertes French wine and cider tourism label: wineries and producers that welcome visitors to minimum quality standards.
