Although the official opening is scheduled for that date, some cider houses have already opened their doors. For example, Ordo Zelai in Oiartzun and Irigoien-Herrero in Astigarraga began welcoming customers shortly after New Year. Others, such as Zabala in Aduna, Oianume in Urnieta and Aginaga in Usurbil, have also started the season before 15 January.

The txotx season is a tradition that draws thousands of people between mid-January and the end of April, who flock to cider houses to taste the new cider and enjoy the festive atmosphere. Although some cider houses stay open all year round, most in Gipuzkoa offer the traditional menu only during this season.

This year, the members of Gure Zirkua will open the cider house season on 15 January at the Alorrenea cider house in Astigarraga.
