Txotx! The cry echoes among the ancient stones and timbers of the cider house and, as if on a spring, all the diners leap up and, tumbler or glass in hand, head for the kupela (cask), where the cider maker has already opened a tap from which a continuous jet of that golden, fresh and natural liquid that is cider shoots out. Although most people in Spain associate cider with Asturias, cider is also made in the Basque Country, and some areas have a strong cider tradition, above all in Gipuzkoa, such as Astigarraga (Donostialdea) or the whole of Goierri, the Basque Highlands.
