The most distinctive feature of this drink is the way it is served: poured from a height. When the liquid hits the glass, it creates tiny bubbles of carbon dioxide that carry the cider’s aroma with them. Precisely in order to appreciate that aroma, cider glasses are wide, so you can put your nose inside and take in the scent of the drink. Once it has been poured and the bubbles have disappeared, it is drunk in a single gulp. The last few drops are used to rinse the part of the glass where the lips go, since the glass is usually shared.
