New Cider Day officially opens the txotx season (when cider is drunk straight from the cask) in Astigarraga: a review of the harvest, the planting of an apple tree, the sagar dantza (apple dance) and the first kupela (cask), opened to the cry of “Gure Sagardo Berria!” (“Our new cider!”). The event is by invitation only.
