    Altuna cider house

    Altuna cider house in Urnieta carries on a deep-rooted cider-making tradition going back to 1904. Several generations of the Altuna family have devoted themselves to it. Surrounded by its own apple orchards, it draws on them to produce close to 80,000 litres of cider a year.

The txotx ritual in 3 steps

More than a meal, txotx is a living ceremony of shared conversation, the warmth of a wood fire and cider flowing straight from the barrel.

  1. The cry of txotx!

    When the cider maker pulls the peg from the kupela and calls out, diners get up from the table, glass in hand, and head for the stream of cider.

    Always wait your turn in the queue

  2. Tilt your glass to 45°

    Hold the thin glass up to the stream so the cider splashes against it and wakes up the “txinparta”, its natural sparkle. Pour just two or three fingers.

    Drink it in one go so you don’t lose the fizz

  3. The menu that never changes

    A juicy salt cod omelette, fried cod with green peppers, a rare chargrilled rib steak from an older cow and, for dessert, Idiazabal cheese with walnuts.
