A food ritual

The txotx menu is almost the same in every sagardotegi, and it is served in this order. Each house has its own way with the cod and the grill.

1. 1 Salt cod omelette Juicy, with slow-cooked onion. It opens the meal.
2. 2 Fried cod with peppers Chunks of cod with local green peppers, or in a sauce.
3. 3 Chargrilled rib steak A beef txuleta to share, grilled over embers and served rare.
4. 4 Cheese, quince and walnuts Idiazabal cheese with quince paste and walnuts, for dessert.
5. Txotx! Throughout the meal, you drink the cider standing up, straight from the kupela (cask), every time the cider maker opens it.
