About Trebiñu cider house
Trebiñu is a family-run cider house in Askartza, a small village in the County of Treviño, set back from the main road. The project got under way in 1998, when the first apple trees were planted and the first cider was made from their fruit, in an area traditionally associated with wheat, sugar beet and potatoes rather than apples.
Today the orchard has more than 2,500 trees, at an altitude of around 600 metres; the cold delays flowering, so each harvest gives a slightly different cider. The apples are picked in October with the help of family and friends, and after pressing and fermentation comes the opening of the txotx season (when cider is drunk straight from the cask). The cider is then bottled, so it is available in bottles all year round. As well as natural cider they make sparkling cider, Ulanzo hopped cider, ice cider and juice.
The family farmhouse has gradually been transformed into today’s cider house: the kitchen now stands where the old cellar of wooden barrels used to be, and the kupelas (large casks) have their own space. It opens all year round from Friday to Sunday at lunchtime, with a cider house menu (talo, a maize flatbread, with txitxiki sausage; salt cod omelette; salt cod; T-bone steak; and cheese with quince paste and walnuts; €42) and, from June to December, a tasting menu that must be requested when booking. There are vegetarian and vegan options.
Bookings are made by phone or WhatsApp. The cider house has its own car park, and a return coach can be requested when booking; from Vitoria-Gasteiz you can also walk there along hill paths starting from Adurtza and Armentia.
