About Valverán
Valverán is the llagar (cider mill) of Pomaradas y Llagares de Sariego, the cider company of the Masaveu Bodegas group, which also owns wineries in other parts of Spain. It stands on the El Rebollar estate in Sariego, where the company grows more than 20,000 apple trees of eleven Asturian varieties using integrated farming. The project, driven by José Masaveu since 1998, began making ice cider in 2007 and, according to the company itself, it is the only llagar in Spain devoted solely to this product.
Its cider, Valverán 20 Manzanas, is named after the minimum of twenty apples needed for each 37.5 cl bottle. The must is cold-clarified, frozen to around minus 20 degrees to concentrate the sugars and, once the ice has been separated, fermented for about ten months at a low temperature; it then rests for a further eight months on its lees in stainless steel tanks.
The cider is sold in the Masaveu Bodegas online shop. Neither the llagar’s website nor the group’s advertises visits to Valverán: the group’s wine tourism activities focus on its wineries.
