About Bordatto Basandere 2024

A medium-dry cider from twelve local varieties (Mamula, Eztika, Eri sagarra, Anisa, Jinkoa, Errezila…) that are pressed separately and fermented for about three months in steel tanks, with wild yeasts only. It gets its sparkle in the bottle, where it finishes fermenting over two months with no added liqueur or yeast. 6.5 % ABV.

Basandere, the “wild lady” of Basque mythology, is the house’s young cider: fruity, light and slightly sweet. Serve it at about 7 °C, as an aperitif, with cheese or with dessert; it keeps for two or three years.
