About Bordatto Txalaparta 2023

Bordatto calls it a “dry apple wine”. It blends two local varieties, apez sagarra for its fine tannin and liveliness, and eztika for roundness and fruit, and ferments it for ten months in barrels and clay amphorae, with wild yeasts only and stirring of the fine lees. It ends up dry, with a very fine bead and toasty, pear-like notes. 6.5 % ABV.

It is drunk like a dry white wine, chilled, with fish, shellfish, Bayonne ham, white meat or goat’s cheese. A 75 cl champagne-style bottle, from the 2023 harvest.
