Goxo (Basque for “sweet”) is a sparkling cider from Astarbe, made from its natural cider with a second fermentation in the bottle. The apples are local, mainly the Astarbe and Mendiola varieties the house has always grown.
It has a fine, lasting bubble and a touch of sweetness that makes it easy to drink; the cellar suggests it for an aperitif or a celebration. Serve it well chilled, in a flute.
